1 1/4 cups all-purpose flour
3/4 cup Equal Sugar-Lite OR Splenda
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 cup unsweetened coconut
3 medium ripe bananas, mashed
1/3 cup unsalted butter
1 egg, beaten OR 1/4 cup egg substitute
1 tsp orange zest
1/3 cup fresh squeezed orange juice
Vegetable oil spray
Preheat oven to 375 degrees. Spray 12 muffin cups with vegetable oil spray and set aside.
Spoon batter into muffin cups, filling each two-thirds full. HEALTHY CARB FRENCH TOAST MUFFINS
Spray muffin pan with cooking spray. In a medium mixing bowl, whisk together all ingredients except bread chunks. Divide the mixture evenly among the muffin cups, overfilling slightly. Per muffin: 140 calories, 17 g carbs, 11 g protein
