There countless different ways that you can use potatoes in your cooking. Even if you take only potatoes without any other ingredients you have plenty of recipes available. Depending on the preparation it is wise to choose the right sort of potatoes for each preparation process. For instance russet potato is great for baking, frying, mashing and roasting.

A simple recipe for instance is recipe for whipped potatoes. You will need around 8 potatoes, some milk (around 1/3 cup), some butter ( cup) and some salt and pepper to taste.

What makes a great baked potato recipe? To ensure your baked potato is at the highest quality, the correct potatoes must be used. Preparation is a critical step to creating the best baked potatoes. To prepare the potatoes, be sure to scrub them clean of dirt and run them under cold running water to ensure they are completely clean and free from both dirt and germs. After washing, dry the potatoes thoroughly with a serviette or similar item. Before placing the potatoes in the oven, prick them several times with a fork to allow steam to escape from the potato so it doesn’t explode in your oven.

To ensure the potato has a good soft skin, give it a rub with some butter or olive oil before backing. The best temperature to bake medium sized potatoes at is approximately 45 minutes at 375 degrees Fahrenheit (190 degrees Celsius). When baking, don’t wrap the potatoes in aluminum foil, as this will cause your baked potato to taste more like they’ve been boiled than baked.

A Great suggestion I learnt from a friend years back to really create great tasting baked potatoes, is to bake the potato once slightly, then stuff the potato with the ingredients you’d like inside, such as bacon and cheese on top, then bake the potato again in the oven until it’s a lovely golden brown color.

Breakfast Brunch Recipes - A Spring-Time Brunch

When the weather just starts to get warm, Sunday brunch becomes a popular outdoor meal. People love to get together for a great meal with their friends to plan for the summer ahead. Brunch is a terrific meal to slow down and enjoy time with family and friends.

A great breakfast brunch menu would include blueberry muffins, eggs Benedict, Belgian waffles, Breakfast Ham & Egg Casserole, and a variety of juices. The Breakfast Ham and Egg Casserole is a good balance for men who believe quiche is too feminine for them to devour. For the juice selections, make sure to have tomato juice on hand for those who enjoy Bloody Marys.

Ingredients you will need:

1.      4 c. French bread

2.      cubed3 c. diced ham

3.      1/2 lb grated American cheese

4.      6 eggs, 4 tsp. flour

5.      1 1/2 tsp. dry mustard

6.      Dash of Tabasco sauce

7.      4 c. milk

8.      4 tbsp. melted butter

9.      salt to taste

First layer the bread, ham and cheese in a 9″x13″ greased baking pan. Beat the remaining ingredients together in the order listed above. Next, pour the mixture over the ham, cheese and bread layers in the pan. Refrigerate mixture in covered pan until ready to bake. Bake for 1 hour at 300 degrees.

Adding this Breakfast Ham and Egg Casserole to a brunch will round out any afternoon menu. It is light enough for a spring brunch, but has just enough weight if you choose to serve the casserole during the cold winter months. Regardless when you serve it your guests will find it to be a delight.

French Toast Recipes

Stuffed French Toast For a Great Brunch – A French Toast Recipe

Stuffed French Toast

1 8-ounce package Neufchatel (low-fat) cream cheese, softened
1 cup apricot jam 1-teaspoon vanilla ½ cup finely chopped pecans
1 16-ounce loaf sweet French bread
4 eggs
1 cup whipping cream
½ teaspoon ground cinnamon
½ teaspoon vanilla
½ cup orange juice

In a small bowl beat together the cream cheese, 2 tablespoons of the apricot jam, and the 1-teaspoon of vanilla until light and fluffy. Stir in the pecans and set aside. Cut the bread into ten to twelve 1 ½-inch-thick slices; cut a pocket in the top of each. Fill the pocket with about 1-½ tablespoons of the cheese mixture.

Combine the remaining apricot jam and orange juice in a small saucepan. Warm over low heat, whisking as jam melts so the mixture becomes smooth syrup.

Beat together eggs, whipping cream, cinnamon and the 1/2-teaspoon vanilla. Preheat a large frying pan over medium heat, or use a griddle, if preferred. Using tongs, dip filled bread slices in the egg mixture, being careful not to squeeze out the filling. Cook in lightly greased pan for about 2 minutes per side or until lightly brown. Keep warm in a 300-degree oven while cooking remaining slices.

To serve, drizzle warm syrup over the hot French toast. Delicious!

Serves 5 to 6

Tip: For a lower fat version, use 1 cup refrigerated egg product in place of whole eggs and 1 % milk instead of whipping cream. It is still excellent and a little easier on the waistline.

Fruit Salad with Honey-Spice Dressing

4 oranges, pared and sliced
2 kiwi, pared and sliced
1-cup fresh seedless red or green grapes, halved
1 Fuji or Cameo apple, cored and cubed

Combine the fruit in a serving bowl and add dressing to taste.

For dressing combine ¼ cup fresh lemon juice, ¼ cup honey and ½-teaspoon ground cinnamon. Whisk and pour over fruit.

Additional breakfast is great, too.
