Healthy & Moist Cornmeal Blueberry Muffin Recipes

Heat oven @375 degree and bake for approximately 20-25 mins.

Grease 1-12 pan muffin tin and set aside.

In a large bowl mix the following dry ingredients and set aside:

1 cup all purpose flour

1 cup organic oat bran flour

1/2 cup wheat germ

1 cup cornmeal

1/2 cup brown sugar

1/2 tsp salt

1 tsp baking powder

1 tbsp baking soda

1 1/4 cup frozen blueberries

1 tsp all spice (optional)

1 tsp cinnimon (optional)

In a smaller bowl mix the following ingredients:

1/2 cup vegetable oil or 1/2 cup melted margarine

2 eggs or 1 cup egg whites

1 tbsp fresh grated orange rind

1 tsp vanilla

Add liquid ingredients to dry, mix until dry is combined but not stirred - lumpy!

Spoon into greased muffin tins - 3/4 full and bake until tops are golden brown or test for doneness.

Cool for 5-10 min and remove from pan. Serve with margarine or great on its own!

Excellent for freezing - up to 2 months!

For breakfast or an accompany when watching TV.
